Here’s the tastiest carrot I have ever experienced grown in mineral rich organic soil of White Gate Farm and roasted by Emrys with a little olive oil and sea salt. This carrot taste like it was carmelized with butter and molasses. When we pick ingredients to use in@our recipes at Miya’s, we have to meet a handful of self imposed criteria; Does it taste amazing? Is it nutritionally valuable? Is it raised or farmed in an ecologically and sociologically ethical way? What is it’s toxicology; we should not serve fish that is high in mercury, PCB’s or dioxin as our patrons trust us to protect their health. Lastly but not least of all is the challenge of keeping our restaurant affordable and accessible to everyone. Good food is a basic human right and the irony of the world that we live in is that a billion people are dying of starvation while a billion more are dying of eating too much of the wrong foods. Accessibility to good food is a human rights issue that is a challenge to every society, rich and poor.
